More Vinegar Blends With Recipes

Strawberry-Lime-Thyme Vinegar

2-3 fresh strawberries, sliced to fit in bottle
1-2 1/4" slices of lime, cut in triangular sections
2-3 sprigs of fresh thyme
Put all ingredients in bottle, cover with white vinegar. Let sit in a cool
place for at least 10 days before using. This one is VERY pretty to look at,  don't be alarmed when the strawberries turn white as all their red juice has leached into the vinegar.

Here's a salad recipe to use with this vinegar:

Fruity Romaine Salad

1 head of Romaine lettuce, torn
1 lg can mandarin oranges, drained
1 med sweet onion, sliced thin (red, vidalia, maui, etc)
1/3 c toasted, chopped pecans

Dressing: Boil 1/2 c strained SLT vinegar with 3 tbsp sugar until sugar is
dissolved. Cool. Mix with 1/4 c salad oil. Toss with above salad, serve
immediately.
 


Italian Vinegar

1 heaping tsp of peppercorns
1 bay leaf
2 sprigs fresh thyme
2 sprigs fresh oregano
2 sprigs fresh basil
1 sprig fresh rosemary
2 garlic cloves, chopped

Twist fresh herbs to bruise; put all ingredients in bottle and cover with
vinegar. Let sit in a cool place for at least 10 days before using. Mix
with olive oil to make salad dressing or a *great* marinade for steak or
chicken.
