Whole-Wheat Banana Nut Muffins

These muffins are very healthy and very delicious!  They are great for an energizing breakfast or an afternoon snack.

 

Makes 12 Muffins

 


 

1 ½ c Wheat flour

¾ c Oatmeal

1 tsp baking soda

1 tsp baking powder

½ tsp salt

 

1 egg

½ c milk

2 Tbsp Oil

2/3 c Sugar

1-2 Ripe bananas, Smashed

½ c Pecans or Walnuts
 

 

Preheat oven to 350F.  Mix dry ingredients together in a large mixing bowl and set aside.  Grease bottoms of muffin pan.  Beat egg in a medium mixing bowl and add milk, oil, and sugar.  Mix thoroughly.  Mix in bananas and nuts and add to flour mixture.  Mix until flour mixture is moist, but do not over-mix.  Pour into muffin pan, filling about ¾ to the top.  Bake for 15-18 minutes or until toothpick inserted comes out clean.

Beth's Homemade Chicken Soup

 Bring to a boil, then reduce the heat and add the pasta. Simmer over medium heat until the pasta is cooked, about 15-20 minutes.
Serve with bread and salad. This rarely if ever gets wasted at our house! It's WONDERFUL on a wet, cold day!more
