Tried and True Recipes!

I used to work at this restaurant so I love any food from there and I made this for my husband and he said it is his favorite.

Alice Springs Chicken

-1/4 cup or grey poupon or other store brand type
-1/4 cup of honey
-1 teaspoon of olive oil
-1/4 teaspoon lemon juice
-2 chicken breasts
-1/2 Tablespoon of oil
-1 cup of mushrooms
-butter
-salt and pepper
-4 slices of bacon
-1/2 cup of cheddar
-1/2 cup of Monterey jack

1. Combine first 4 ingredients in small bowl and whip for 30 seconds.  Pour over chicken and marinate for one hour. (This doesn't look good at all but it will taste good on the chicken later)
2. Cook chicken and bacon in a skillet till done.
3. Remove from skillet and sauté sliced mushrooms in butter until tender.
4. Arrange bacon, mushrooms, then cheese on top of the chicken and sprinkle with parsley.
5. Bake in oven till cheese has melted.
6. Then you can serve with this:

- French fries with Monterrey jack and cheddar cheese and leftover bacon on top with ranch (this is really good and is known as cheese fries at Outback- tip: use fast food fries)
-steamed vegetables
-baked or mashed potatoes
-salad


Other Tip: Use fresh mushrooms instead of canned and they taste much better I think.
 

I don't know about you but I do not like to spend a ton of time in the kitchen.  The recipes that I provide here are ones that I came up with and my family loves.  The best part is that each recipe takes less then 30 minutes to prepare and cook (with the exception one crock pot recipe). I turn to these recipes when I need something quick, easy and tasty meal.

Mini Meatloaves
(serves 4 adults)
 
1 pound ground beef
1/2 package of onion soup mix
1 egg
2-4 crackers
    Mix all ingredients together and form into 8 mini meat loafs.  Place on foil lined broiler pan and broil on high for 8-10 minutes.  Keep a close eye on them because every stove is different!!!
Serve this with two cans of green beans (microwave for 1 min 30sec) and instant potatoes and you have a hole meal in less then 30 minutes.
 
Chicken Taco Foil Dinner
(makes 4)
 
4 boneless, skinless chicken breasts
2 large potatoes (thinly sliced)
taco seasoning (to taste)
1 cup salsa (divided into 1/4 cup)
fiesta blend cheese
sour cream
 
Take 4  pieces of aluminum foil (large enough to fit around a chicken breast and still be able to fold up) and divide sliced potatoes into a pile on each piece of foil. Sprinkle taco seasoning onto the potatoes.  Place chicken breasts onto potato piles.  Cover with 1/4 cup salsa and sprinkle with cheese.  Fold up the packets and bake in a 450 degree oven for about 20-25 minutes until chicken is done in the center.  Top with sour cream and serve.
 
Crock Pot Roast
 
2 pound Roast (Pork or Beef)
3 large potatoes (sliced thin)
2 large carrots or 10 baby carrots (sliced thin)
1 garlic clove
1 tsp coarse Ground pepper
 seasoning
1 small onion (or 3/4 cup frozen chopped onions)
1/4-1/2 cup water
 
Place sliced potatoes, carrots, and some of the onion on the bottom of the crock pot.  Place roast on top of the veggies.  Cut diagonal lines on top of the roast about 1/2 inch deep into a diamond pattern.  Press garlic clove on top of roast and spread around evenly.  Sprinkle with pepper and a little salt.  Add any other seasoning that you would like.  Pour water down side of pot so as not to wash the spices off of the roast.  Set on low for 6-8 hrs or high for 4-5 hours. 
 
This makes a great meal and I fix it anytime that I am not going to be home for dinner and my husband has to feed the kids.
 
My favorite meal to make however is Katie's Italian Chicken skillet.  This is a very versatile recipe. 
 
Katie's Italian Chicken Skillet
 
4 boneless skinless chicken breasts
2 cans diced tomatoes
frozen diced onion (as much as you like)
11/2 to 2 tablespoons of Italian seasoning
Mozzarella cheese
 
Place chicken breasts in a skillet large enough so that they do not over lap.  Drain one can of diced tomatoes and add both cans to the skillet.  Add onion and boil on med high heat until chicken is done in the center.  Turn off the heat and add the cheese, Cover and let set until the cheese is melted.  Serve with Italian seasoned green beans ( 2 cans green beans with Italian seasoning and 1/2 cup frozen onions microwave for 1 min 45 sec) and you have a healthy complete meal.
 

 

I hope that you like these recipes.  Even my picky little eater likes these.  Have fun and add to them what you like.

Round Steak Supper
 
1- 2 pound round steak cut into serving size pieces
2 cans condensed tomato soup
1 large onion cut into slices
2 Tablespoons of oil
1 Cup flour
5-6  medium to large potatoes, peeled and cut into serving size chunks
2 cans of green beans
salt/pepper to taste
 
Heat oil in a Dutch oven until hot.  Cook onion in oil until translucent. Remove from pan. Dredge steak pieces in seasoned flour and brown on both sides removing from pan.  Preheat oven to 350 degrees.  After all steak pieces have been browned, begin to assemble in Dutch oven, as follows; Steak, onion, potatoes, then soup.  Cover and cook for 45 minutes.  Add the green beans for the last fifteen minutes and you have a wonderful one pot meal!  Easy clean up!
