Tasty Turkey Chili

 

 

 

Ground turkey makes this chili a low-fat and healthy dish. Look for the Italian seasoned variety (Jennie-O brand); it adds a nice flavor. You can also use canned garbanzo, pinto or red beans.

 

Save time by using frozen chopped onions.

 

1 lb package ground turkey

˝ c. chopped onion

1-2 TBSP olive oil

1 can white beans

1 can black beans

1 can kidney beans

2 cans diced Italian style tomatoes

1 tsp each: oregano, chili powder and cayenne pepper

˝ tsp cumin

1 bay leaf

 

 


In large, heavy skillet, sauté onions and turkey in olive oil until meat is no longer pink. Add tomatoes, then drain beans and add. Sprinkle seasonings over all. Reduce heat to low and simmer for 40 minutes to one hour, stirring occasionally. Remove bay leaf and serve.
