Taco Soup

I've served it to my family, at Stake Youth Activities and even taken it to work and there is NEVER any left:

1 lb ground beef, cooked and crumbled
1 small onion chopped
1 large can Fiesta Corn
1 can red beans
1 can kidney beans
1 can black beans
1 or 2 cans Rotel Tomatoes (whichever is desired)
1 packet of taco mix

 

Once the meat is done, add in the onion so that it caramelizes a little. Pour in all the other ingredients plus 3 cups of water. Heat completely.

This can be added to for feeding a large crowd, but additional taco mix packet may be needed. Serve with Fritos instead of crackers.

Beth's Homemade Chicken Soup

 Bring to a boil, then reduce the heat and add the pasta. Simmer over medium heat until the pasta is cooked, about 15-20 minutes.
Serve with bread and salad. This rarely if ever gets wasted at our house! It's WONDERFUL on a wet, cold day!more
