16 c ground cucumbers
6 c ground onions
8 ground green peppers
1 c salt
14 c sugar
4 c cider vinegar
1/4c celery seed
1/4 c mustard seed
1/4 c mustard powder
1c flour
1T turmeric
Combine cucumbers, onion, green peppers in large bowl: sprinkle with salt
cover with ice cubes. Let stand 2 hours. Drain thoroughly and press out
excess liquid thru cheese cloth.
Make paste with vinegar, mustard powder, flour and turmeric. add sugar and
the other 2 spices. Heat to boiling. Add drained veggies and simmer 10
minutes. Pack hot into Hot jars leaving 1/4" head space. Adjust caps. Process
10 minutes.
Makes 7 quarts
