Spring Dinner With A Fruity Twist

We served a light dinner of fresh spring salad greens with Raspberry Poppy seed Dressing, Easy Spring Chick Chicken Strips with an orange slice. 


Spring Chicks Easy 1 - 2 - 3 - 4- Steps Chicken Stripes

1 - Mix 1 cup of Italian Style Bread Crumbs with 2 Tablespoons melted butter or Margarine

2- In Shallow bowl beat 1 egg with fork.

3 - Cut 6 chicken breast halves into 4 1\2x 1 1\2 inch pieces. Dip Chicken Stripe into egg.

4 - Coat egged Chicken Stripe evenly with bread crumb mixture and place on foil lined cookie sheet. (Can place on cookie sheet and flash freeze then place in freezer ziplock bag and cook on a busy day.)

5 - Bake at 375 degrees for 15 - 18 min or until chicken is no longer pink.
 

 

Raspberry Poppy Seed Salad Dressing

1 Tbsp grated onion
3/4 cup sugar
1 tsp. dry mustard
1 tsp. salt
1/3 cup raspberry vinegar
1 cup vegetable oil
1 1/2 tsp. poppy seeds

Combine onion, sugar, mustard, salt and raspberry vinegar. Whirl
in blender 15 seconds. Slowly add vegetable oil and poppy seeds.
Turn blender on and off to mix. Cover and refrigerate at least 2 hours or overnight. Makes about 1 cup.

This is delicious on a salad of spinach, red onion, mandarin oranges and sunflower seeds.

Beth's Homemade Chicken Soup

 Bring to a boil, then reduce the heat and add the pasta. Simmer over medium heat until the pasta is cooked, about 15-20 minutes.
Serve with bread and salad. This rarely if ever gets wasted at our house! It's WONDERFUL on a wet, cold day!more
