Easy Crock-Pot Soup

by: Heather Johnston

After finally realizing why my soups in the crock pot don't taste that great, I finally figured out that the secret was the onions.

Here's my quickie recipe for chicken, ham, beef or pork soup in the crock-pot:

I always combine chicken and beef broth together because it gives it a good flavor.  I also love herbs and spices so I add parsley, sage, basil, oregano, ground pepper, seasoned salt, garlic powder & a little cayenne or Cajun seasoning.

Then add the roast or stew meats.  Let that cook in the crock pot for about 4 hours, then add carrots and celery and (if desired), corn, green beans, 1 can tomato sauce and 1 can diced tomatoes.

Let cook for another 4 - 5 hours.  If you want to add onions, add them during the last hour so it doesn't make it taste funny.

Bring to a boil, then reduce the heat and add the pasta. Simmer over medium heat until the pasta is cooked, about 15-20 minutes.
Serve with bread and salad. This rarely if ever gets wasted at our house! It's WONDERFUL on a wet, cold day!more
