Orange Juice Recipes

Orange-Ginger Carrots
-
8 medium carrots
-
1 tb. sugar
-
1 tsp. cornstarch
-
1/4 tsp. salt
-
1/4 tsp. ginger
-
1/4 cup orange juice
-
1 tb butter
Peel carrots, slice cutting them at a
slight angle, about 1" thick. Bring about 1" of lightly salted water to a
boil in a two quart saucepan. Add carrots and cook, covered for 10-15
minutes, then drain.
Grape-Nut Orange Muffins

2 cups sifted flour

1/4 cup sugar
-
1 tsp. baking powder

1/2 tsp. baking soda
-
1 cup Grape-Nuts
-
2 eggs, beaten
-
1 cup orange juice
-
1 tb grated orange rind
-
2 tb. vegetable oil
Preheat oven to 400 degrees.
Sift flour, sugar, baking soda and baking powder. Stir in Grape-Nuts.
Combine eggs, orange juice, and orange rind. Add vegetable oil and mix
well.
Add egg mixture to dry mixture. Stir until moistened. Do not stir more
than 50 strokes.
Line muffin pan with paper muffin cups and fill 2/3 full.
Bake for 20-25 minutes.

Baked Apples
2 apples
1/2 cup orange juice or apple juice
Fillings:
2 tb brown sugar
1 tsp. marg. or butter
1/8 tsp. cinnamon
or
2 tb. raisins
1 tsp. margarine
or
2 tb. chopped nuts
1 tsp. marg or butter
1/8 tsp. nutmeg
Wash apples and remove cores.
Place upright in small baking dish. Fill the centers of the apples with
one of the above fillings. Pour juice over apples.
Bake 30-40 minutes until apples are tender when pierced with a fork.
Serve warm or cold with juices from
pan.

Juicesicles
1 1/2 cups fruit juice (oj)
Fill 6 Tupperware holders or small
paper cups with juice. Use plastic spoons for handles in paper cups.
Freeze until solid.
Juice Cooler
1 6 1/2 oz. bottles sparkling mineral water, chilled
1 12 oz. can peach nectar, chilled
1/2 cup unsweetened orange juice, chilled
1/4 cup unsweetened grapefruit juice, chilled.
2 tb. lemon juice, chilled
Combine all ingredients in a large
container and mix well. Pour over ice and serve immediately.
Orange Julius
6 oz. frozen orange juice concentrate
1 cup milk
1 cup water
1/4 cup sugar
1 tsp. vanilla
2 ice cubes
Blend all ingredients until ice is crushed.

Homemade Chicken Soup |

Bring to a boil, then reduce the heat and add the pasta. Simmer over
medium heat until the pasta is cooked, about 15-20 minutes.
Serve with bread and salad. This rarely if ever gets wasted at our house! It's
WONDERFUL on a wet, cold day!
