Instead of buying mixes with tons of preservatives and other chemicals, why not save lots of money and your health by making them yourself?  These mixes are so much cheaper than buying the pre-made mix at the store. They are very convenient and make great gifts!

Buttermilk Pancake Mix

 

    Makes 10 cups of mix

     

  • 2 cups buttermilk powder

  • 8 cups all-purpose flour

  • 1/2 cup granulated sugar

  • 8 tsp baking powder

  • 4 tsp baking soda

  • 2 tsp salt


Sift the ingredients together well. Store in a container with a tight-fitting lid.
To make the mix:
 

  • 1 egg, beaten

  • 2 Tbsp vegetable oil

  • 1 cup water, or more as needed.

  • 1 1/2 cups buttermilk pancake mix (see above)


Mix ingredients until blended. Let it stand five minutes. Makes 10 pancakes.
Notes:
Use the mix within 6 months of when you make it.
If you can't find buttermilk powder in your local grocery store, try a bulk food store.

Gourmet Hot Chocolate Mix

 

    From Taste of Home Magazine

     

  • 1 25 ounce box non-fat dry milk

  • 1 16oz jar non-dairy creamer

  • 1 15 or 16 ounce container of presweetened cocoa mix (ex. Nestles Quick)

  • 1 13 ounce jar chocolate malted milk powder

  • 1 cup powdered sugar


Mix all the ingredients together in a very large container. Use a wire whisk to be sure it is distributed evenly. Store in Ziploc bags.
To make hot cocoa, place 2 - 3 tablespoons of mix into a mug. Add boiling water and stir well. You may use more or less mix to taste or depending on the size of the mug.

Homemade Bisquick

 

  • 5 cups flour

  • 2 1/2 tbl. double acting Baking powder

  • 2 tbl. sugar

  • 2 tbl. salt

  • 1 tbl. Cream of Tarter

  • 1 cup shortening


Sift drying. together. Cut in shortening with pastry blender until it resembles crumbs. Store in airtight container up to sic weeks at room temp. or freeze for up to six months.

Merry Ginger Muffin Mix

 

  • 6 c flour

  • 2 c sugar

  • 3/4 c instant nonfat dry milk

  • 1/3 c finely chopped crystallized ginger

  • 3 tsp baking powder

  • 2 tsp salt

  • 1 tsp ginger

  • 3/4 tsp baking soda


Lightly spoon flour into measuring cup and level off.
In a large bowl, combing all ingredients. Mix well. Store in an airtight container in a cool dry place.

*For gift giving, measure 2 C of mix (by dipping cup into mix). Put in a decorative container. Use mix to make Merry Ginger Muffins.

Makes 8 Cups of mix.


Merry Ginger Muffins
 

  • 2 c Merry Ginger Muffin Mix

  • 2/3 c water

  • 1/3 c oil

  • 1 egg, slightly beaten


Heat oven to 400 degrees. Line 12 muffin cups with paper baking cups.
In a med. bowl, combine muffin mix, water, oil and egg. Stir just until dry ingredients are moistened. DO NOT OVER MIX. Divide batter evenly into paper-lined cups. Bake until golden brown about 25 minutes.

Christmas Friendship Tea

2 cups Tang powder
2 cups sugar
1 1/4 cup powdered lemonade
1 tsp. cinnamon
3/4 tsp. cloves
1/2 tsp. nutmeg.

Mix ingredients and store in airtight container.  When ready to drink add 2 tsp. of the mix to an 8 oz. mug of hot water.

Scottish Shortbread Mix

1 1/2 cups all-purpose flour
3/4 cup powdered sugar
1/4 tsp. salt

In a medium bowl, combine all the ingredients, blending well. Store in an airtight container.

Attach this to the Jar

Scottish Shortbread
Makes 16 pieces

1 cup butter, softened
1 package Scottish Shortbread Mix

Preheat the oven to 300 degrees F. Knead the butter into the shortbread mix and press the mixture firmly into an 8-inch pie plate, or shortbread mold. Bake for 1 hour. The shortbread should be pale in color, not browned. Cut into wedges while still warm.

Cream of ____ Soup Mix


2 cups powdered nonfat milk
3/4 cup cornstarch
1/4 cup instant chicken bouillon
1 teaspoon onion powder
1 teaspoon dried basil
1 teaspoon dried thyme leaves
1/2 teaspoon black pepper
 

Mix all ingredients together well and store in an airtight container.

To make the equivalent of one can of cream of something soup:

Mix 1/3 cup of soup mix with 1 1/4 cups of water. Bring to a boil over medium heat and cook for a few minutes until thickened. Watch carefully and stir constantly to prevent sticking.

Make-Ahead Pancake Mix
8 cups flour
3 tsp. salt
3 cups dry milk
1/2 cup sugar
1/3 cup baking powder

Instructions
In a large bowl add:
1-1/2 cups water
2 tbsp. oil
1 egg
2 cups mix
