Do you ever get into a box dinner rut?  It happens to me from time to time!  I always need a place to go to be inspired.  I asked for dinner menu suggestions and here are dinner ideas many women around the world have shared!

We will also have chicken nuggets and tator tots this week.  These are easy for me to cook and also my kids will eat them.

-Diana

Today we had chicken burritos.  Throw some chicken breasts in the crock pot for all day with some cumin, salt and pepper.  Then shred some cheese, make some guacamole, add sour cream, lettuce, tomato and voila!

Last night we had chicken pasta "salad".  Penne pasta with ranch dressing, bacon bits, black olives, shredded cheese and grilled chicken strips.

-Laura

Sunday I made Lasagna, green salad and garlic bread.

Last night I cooked up some taco meat, heated up the leftover refried beans that I had made Saturday night, for a party, and the family had the option of having tacos or nachos with green salad.

We will probably have cheese tortellini with Alfredo sauce, tonight.

Wednesday night, the missionaries are coming for dinner, so we will probably bbq or have a junk food dinner, which they absolutely love!

Meals that I know we've had recently are:

Smoked sausages with fried potatoes and broccoli
Grilled hamburgers, tator tots, baked beans and veggie tray
Grilled cheese or tuna sandwiches, chips and veggies.
Grilled chicken, pasta salad, green salad, green beans and sour dough Garlic bread.
Spicy chicken strips, Texas fries, veggies and green salad.
Steak, twice baked potatoes, green salad, corn on the cob, rolls and apple pie! (Father's Day)
Turkey or ham sandwiches, chips, pickle spears (Claussen only!). Homemade pizza and green salad.
Ham fried rice and chicken stir-fry.

-Taina

We like to make Italian stir fry.  All you need is a steak cut into cubes and cooked, a carton of cherry tomatoes cut in half, a couple of zucchini sliced thin and a small bottle of Italian dress.  After the steak is cooked drain it and toss the zucchini in with it and cook until tender.  Then add tomatoes and the dressing.  When it is all heated through serve over spaghetti.

-Kerrie

Recently we had chicken parmesan pasta with sauce, peas, and pepperoni bread sticks

Other recent meals were:
shrimp kabobs with peppers & mushrooms, melon, and rice
Chicken & linguine with peanut sauce, mixed veggies
Smokey tuna sandwiches (use liquid smoke for flavor), carrot sticks, strawberries, and noodles with garlic/olive oil

- Stephanie

Quick stroganoff-brown about 1 1/2 lbs. of ground beef with some onion.  Drain the grease.  Add a can of cream of mushroom soup and a can of sliced mushrooms and stir really well.  Than add sour cream, usually about 1 1/2 cups and mix up.  Serve over rice, egg noodles, or mashed potatoes.

Also another really quick one.  Slice up a couple of large potatoes and fry them in butter/Crisco.  When they are brown and pretty well cooked, add sliced up hotdogs and cook until those are browned.  Serve with ketchup and mustard.

-Stacy

BBQ Teriyaki chicken with BBQ corn on the cob and raspberry lemonade.  Also, sweet and sour chicken with fried rice.

-Valerie

Oven Baked hobo dinner. 1 lb ground beef, then add sliced carrots and potatoes and celery and salt, pepper and garlic powder to taste. Place in a baking dish cover with foil and bake at 450 for 30-40 min until everything is cooked.

-Valerie

I put some chicken breasts in the oven with BBQ sauce. We will have leftover homemade macaroni and cheese, potato salad, and macaroni salad from yesterday with it.

Love,
Jamie

We had Hamburger/rice/cheese.  It is basically bell pepper stuffing with out the bell pepper.

-Nancy Jo

We are having Chicken Tender Strips, hash browns, salad, and who knows. Kind of like if you see something else you want to eat, get it and eat it.

Jodi

We're having a Mexican tater tot casserole with taco seasoned turkey (from last night's roasted turkey) instead of hamburger.  I think it will be really good. You put a layer of taco seasoned meat (turkey, hamburger, pork, chicken etc) I add a little extra water to the seasoning packet, maybe 2 TBSP so it helps melt everything.  Then a layer of frozen corn, if you have olives that's a good thing to throw in there too.  Then a layer of shredded cheese, tater tots to fill the dish, bake for about 30-35 minutes until the tater tots are browned (at 400 degrees F), then turn off the oven, throw some more cheese on top and as soon as it melts, serve!  Easy, quick and even better when you have leftover meat to use.

-Jeni

Tonight I had some bottled spaghetti sauce leftover from the weekend, so I poured it over some diced veggies (pumpkin, broccoli, green beans, carrot and fresh mushrooms) - I will cook it in the oven in a casserole dish and have it with spaghetti and parmesan cheese. For dessert we will have our winter "usual" dessert - canned fruit (apricots tonight)...I'll place it in a casserole dish, sprinkle with a few things (like walnut crumbs, cinnamon, coconut etc) and bake it until it's nice and hot.  It's winter here...so we like our fruit HOT at this time of year.

-Kathy

We had Chicken Sandwiches, corn on the cob and pasta salad.

-Naomi

When I come home and I really don't feel like cooking a whole lot, I take a pack of ramen noodles, add a can of tuna and a can of mixed vegetables... And Voila!  What a quick fix!

-Lucie

We had beef sirloin tips in teriyaki stir-fry over rice.  I also made some rolls.

-Shiloah Baker

One of my favorite recipes, quick and easy to fix, but feeds about 6 people is called Cornchip Gabage'. Just remember:
 #2 2 lb hamburger browned
drain 2 cans of tomato soup
2 cans of vegetable soup
2 cans of chili beans

Mix all ingredients heat and serve. Use corn chips for crackers.

-Tim Dunahee

Tonight, we are having deer steak, mashed potatoes, noodles, or gravy, green beans, and apple pie.

-Kathy

My family loves hamburger soup.  1 lb hamburger browned.  In soup pot add corn, peas, carrots, green beans, potatoes (1 can each w/juice) and a can of V-8 (large) simmer add salt and pepper to taste.  Salad and crackers - yumm-o

-Tami

We are having chicken enchiladas with white sauce and salad.

Last night we had BBQ pulled pork sandwiches with salad and baked beans! mmm!

-Shiloah Baker

I usually like to fix a variety of foods especially with three kids.   One of the kids favorites is potato tacos:
4-5 med. russet potatoes mashed with butter sour cream and seasoned with salt, pepper, and chicken bouillon.

Place about 20 corn tortillas in microwave for about 1 1/2 min. covered in plastic remove and place potato mixture in each tortilla and fold over place in heated pan with just enough oil to fry each taco.

Remove when golden on each side, drain on paper towels serve with shredded lettuce, yellow cheese, and fresh homemade salsa in each taco.  They are a hit with my boys.

Also, pork chops with a spicy tomato sauce with onions served over white rice.  Another one, shrimp and fish tacos with cabbage, not lettuce makes all the difference.

Asian noodles with mixed veggies, and shrimp served with fried rice. Just a few of my staples in the home.

Enjoy if you decide to try!

-Kathy, site visitor
