Gingerbread with Lemon Sauce

1/2 C sugar
1/2 C butter, room temperature
1 egg
1 C molasses
2 1/2 C all-purpose flour
1 1/2 tsp baking soda
1 tsp ground cinnamon
1 tsp ginger
1/2 tsp ground cloves

1/2 tsp salt
1 C hot water

1. Preheat oven to 350 degrees. Grease and flour 9x9 square pan.
2. Cream together butter and sugar. Add egg and mix well. Beat in molasses.

3. Sift together flour, baking soda, salt, and spices. Add these dry ingredients to the creamed butter mixture and stir. Add hot water and stir until combined.
4. Pour batter into prepared 9x9 pan. Bake for 1 hour or until toothpick inserted in middle comes out clean. Serve warm with hot lemon sauce.

Lemon Sauce
1/2 C sugar
1 Tbsp cornstarch
1 C warm water
2 Tbsp butter
zest and juice of one lemon

Whisk together sugar and cornstarch in small saucepan. Add water and cook over medium heat, stirring constantly, until thickened. Remove from heat. Stir in butter and lemon zest and juice. Serve over warm gingerbread.

Bring to a boil, then reduce the heat and add the pasta. Simmer over medium heat until the pasta is cooked, about 15-20 minutes.
Serve with bread and salad. This rarely if ever gets wasted at our house! It's WONDERFUL on a wet, cold day!
