Fabulous Flan


Flan is an egg custard dessert usually served in Mexican restaurants. It’s not difficult to prepare at home and can be served as is or with whipped topping, as pictured.


 
1 cup plus 1/2 cup sugar , divided
6  eggs
1 14oz can sweetened condensed milk
2 13 oz cans evaporated milk
1 tsp vanilla


PREPARATION:


Preheat oven to 325 degrees. You will need 6 ramekins (individually sized baking dishes) and a large oven proof baking pan to set them in. 
Using a whisk, blend eggs together, then mix in milks. Finally add the ½ cup sugar slowly, then vanilla, blending well after each addition. Set aside.

 

 

Put a medium sized saucepan on stove and turn on heat to medium high. When pan is slightly warm, pour in 1 cup sugar. Stir constantly until sugar becomes brown. It will turn into caramel. Working quickly, pour a few tablespoons of the caramel into each ramekin, tilting the mixture around so it covers the bottom and sides. comes caramel.


Place ramekins in baking dish and add about 2 inches of hot water. Bake at 325 for 45 minutes or until knife inserted in center comes out clean.
 

Remove and refrigerate for one hour. To serve, turn upside down onto a small plate.

Next morning, heat oven 350 F. Remove plastic wrap from baking dish, sprinkle with paprika and bake casserole 45 to 55 minutes or until set in center and edges are lightly browned. Serve with salsa or fresh pico de gallo, if desired.
